Appe huli (Raw mango drink)

Malnad food is incomplete without appe huli! A delicacy from the region of Tirthahalli, I used to love drinking this growing up. Usually served between courses, this drink refreshes and gets your palette ready for the food to follow. Very simple and lip-smacking, tastes amazing served hot or cold.



Cup measurement used – standard 1 cup = 240 ml

Serves 2


Ingredients:

Boiled raw mango pulp 1 cup

Water 2 cups

Jaggery 2 tbsp

Salt to taste


Tempering:

Oil 1 tbsp

Mustard seeds 1 tsp

Cumin seeds 1 tsp

Fenugreek seeds 1/4 tsp

Dry red chilis 2

Asafetida a pinch

A sprig of curry leaves


Method:

Boil 2 medium sized raw mangoes in pressure cooker for 2 whistles. Squeeze out the pulp (should yield around a cup of pulp) and blend it to get a fine paste. Transfer the contents to a saucepan and add 2 cups of water, salt to taste and jaggery. Boil it for 10 minutes. Prepare the tempering by heating oil and spluttering mustard, cumin, fenugreek seeds, red chilis, curry leaves and asafetida. Add the tempering to the broth and serve it hot or cold.
